Nutrient-based standards
ImageIn order to comply with the new legislation school caterers will have to keep detailed records of all foods/ingredients used in the preparation of meals.  This information is then used to calculate the nutritional composition of the food served to the children.  If the results do not comply with the Nutrient-based Standards then changes will have to be made to the menu.

The School Food Trust implies that caterers should be looking at individual menus. Furthermore, some schools have already purchased expensive computer programme to do the calculations.
